About: Keki Modern Cakes
In 2017, founders Moul Kim and Lawrence Wai opened Keki Modern Cakes after traveling across Asia tasting cakes, tarts, and desserts that inspired their concept. Partnering with former Per Se chef Kevin Kim, they introduced a signature cake that comes in one playful jiggly style with several different flavors.
Keki is best known as the home of New York’s only bouncy cheesecake and its signature Jiggly Castella, a light, bouncy sponge cake. The menu also features favorites like the Cookies & Cream Fancy, Green Tea Fancy, Strawberry Fancy, and the Original Fancy, a classic New York–style cheesecake.

The secret to the cake is it’s a souffle so they add meringue which creates a lot of air, making it fluffy and bouncy.
Experience
The bakery is small but spacious enough to stand in line with some elbow room. It is clean and well lit. The counter is small but the baked goods are displayed deliciously. The staff was polite, welcoming and eager to help.

Appearance
The bouncy cheesecake is a very light cheesecake color around the sides and golden brown on the top. The cake looks extremely moist and creamy in appearance — and yes it’s bouncy.
Touch
To touch, the cake is super moist. It has the consistency of angel food cake but more dense and much creamier.
Smell
There isn’t much of a smell to the Bouncy Cheesecake. You get a fresh, lighter cheesecake aroma that is strong enough to trigger your Teen Wolf impulse.
Taste
The first bite of the Bouncy Cheesecake is airy and fluffy, yet still rich with a smooth cheesecake flavor that’s balanced and not overly heavy. The plan was to take a few bites and save the rest for later… but let’s be honest, that plan sucked. We kept going back for “just one more bite” because the light, creamy texture and subtle cheesecake flavor were weirdly addictive.
And then there’s the jiggle. This thing really does bounce … so much you’d consider going in for a full motorboat (We resisted… mostly.) Or did we?
Keki offers both the Original Bouncy Cheesecake and an Ube Bouncy Cheesecake, each bringing that same signature wobble with a slightly different flavor twist. Either way, it’s a fun change of pace from the typical dense, heavy New York cheesecake.
