About: Keki Modern Cakes
| In 2017 founders Moul Kim and Lawrence Wai opened Keki Modern Cakes after traveling Asia and tasting all the cakes and tarts. Along with former Per Se chef Kevin Kim, Keki has created a unique cake that comes in one jiggly style and several different flavors. Keki is also home of New York’s only bouncy cheesecake and the Jiggly Castella (a bouncy spongecake). Other cakes include the Cookies and Cream Fancy, Green Tea Fancy, Strawberry Fancy and the Original Fancy (New York City Cheesecake style). |
Chef's Note
The secret to the cake is it’s a souffle so they add meringue which creates a lot of air, making it fluffy and bouncy.
Experience
The bakery is small but spacious enough to stand in line with some elbow room. It is clean and well lit. The counter is small but the baked goods are displayed deliciously. The staff was polite, welcoming and eager to help.

Appearance
The bouncy cheesecake is a very light cheesecake color around the sides and golden brown on the top. The cake looks extremely moist and creamy in appearance — and yes it’s bouncy.
Touch
To touch, the cake is super moist. It has the consistency of angel food cake but more dense and much creamier.
Smell
There isn’t much of a smell to the Bouncy Cheesecake. You get a fresh, lighter cheesecake aroma that is strong enough to trigger your Teen Wolf impulse.
Taste
The first bite of the Bouncy Cheesecake is airy and fluffy — but dense with a smooth cheesecake flavor that isn’t intense or over the top. The plan was to take a few bites and save it for later, but these things never goes as planned. We kept sneaking in “just one more bite” because the light and creamy texture coupled with a delicious cheesecake flavor was slightly addictive. Keki’s Bouncy Cheesecake is a nice alternative to your typical heavy, super creamy New York cheesecake. We absolutely recommend trying one of their many options on your cheat day.

The cheesecake is airy and creamy with a yummy cheesecake flavor. The flavors aren’t intense but the texture is addictive and makes this Keki creation a must try.
