About: Keki Modern Cakes

In 2017 founders Moul Kim and Lawrence Wai opened Keki Modern Cakes after traveling Asia and tasting all the cakes and tarts. Along with former Per Se chef Kevin Kim, Keki has created a unique cake that comes in one jiggly style and several different flavors. Keki is also home of New York’s only bouncy cheesecake and the Jiggly Castella (a bouncy spongecake). Other cakes include the Cookies and Cream Fancy, Green Tea Fancy, Strawberry Fancy and the Original Fancy (New York City Cheesecake style).

Chef's Note

The secret to the cake is it’s a souffle so they add meringue which creates a lot of air, making it fluffy and bouncy. 

Experience

The bakery is small but spacious enough to stand in line with some elbow room. It is clean and well lit. The counter is small but the baked goods are displayed deliciously. The staff was polite, welcoming and eager to help. 

Review

Appearance

The Castella Creamwich is thick in size with a golden brown crust on each slice of the pale cheesecake colored castella bread. It appears very airy but dense. The cream in the center is bright white and very generously applied.  

Touch

The Castella Creamwich is light but it does have surprisingly decent weight to it. The Castella slices are fluffy and moist. They have some bounce to them but pull apart perfectly. The cream in the center is airy and starts to ooze out when you put pressure on the creamwich. 

Smell

There isn’t much smell to the Castella Creamwich. All you get is a soft, sweet smell of Castella that serves as a solid enough pep talk to activate your inner cheater instincts. 

Taste

When you bite into the Castella Creamwich it’s like sinking your teeth into a fluffier pound cake with whipped cream in the middle. The cake is nice and airy like angel food cake but with more meat on the bone. The flavors and textures are good but the Creamwich didn’t hold together very well. We think, overall, it’s a good cheat day option but one that will leave you wanting just a little more. 

What to Tell Your Friends

A fluffy and bouncy angel-food-type cake with a whipped creamy center. It’s easy to devour because of the great texture but not heavy enough to appease a hungry cheater
