| Maman (mother in French) is the creation of Benjamin Sormonte and Elisa Marshall. It offers both savory and sweet foods inspired from the south of France and North America. Their high quality, locally-sourced ingredients are the root of their delicious menu. The French-American bakery sells a selection of savory baked goods, breakfast and lunch options. But what really makes Maman sensational is that damn chocolate chip cookie they call the Nutty Chocolate Chip Cookie. It’s made of almonds, macadamias, walnuts, sea salt and a “top secret” French dark chocolate. While they won’t tell you what chocolate they use my money is on Valrhona. This cookie made the list of Oprah’s Favorite Things 2017. |
Chef's Note
Bouchon Bakery, like most, uses unsalted European-style butter. The higher butterfat content gives the recipes a much better flavor. They also use Valrhona and Guittard as their chocolates of choice. For the Chocolate Chunk and Chip Cookie they use Valrhona Guanaja 70% or Guittard 72% chocolate. They also use Kosher salt.

Our experiences at Maman have always been pleasant. Each location has its own rustic and cozy French vibe to it. The food, however, is constant and always very good.
Each person that we have dealt with, either behind the counter or serving food, has made our experiences very enjoyable. They made us feel welcome and were very friendly.
The setting and decor of each location makes you feel like you’re in a French cafe. Things never seems hectic or rushed, as the atmosphere is relaxed and warm.
The food, regardless if it’s sweet or savory, never disappoints. Whether you’re ordering baked goods or a meal, you can taste the quality ingredients in each item.

Appearance
Maman’s Homemade Oreo is small, very thin and dark brown. The cream inside the Oreo is concealed within the cookie.
Touch
The Oreo is very light and very thin. It makes you feel like it’s missing something.
Smell
The cookie smells of cocoa with a hint of butter that shines through. No other scent is prominent.
Taste
The first bite is almost like biting a cracker. It’s not crispy or salty, but it leaves something to be desired. The cookie has a nice chocolate shortbread flavor but it’s so thin that it’s not very satisfying. The cream in the center is basically nonexistent. If there was more cream the cookie would at least have more substance and be more enjoyable. Instead, it’s too thin with very little cream filling. Overall, it’s pretty disappointing and you’re better off trying something else.
What to Tell Your Friends
A nice attempt at the classic Oreo but it’s too thin with basically no cream filling. No one will mistake this for a double stuffed.
